Ingredients
Pie Crust
1cupall-purpose flour
1teaspoonbaking powder
dash salt
½cupbutter
1egg
Filling
4slicesbacon
4fresh tomatoes
1cupshredded cheddar cheese
2Tbspchopped chives
2eggs
½cupmilk
½teaspoondried thyme or 1 teaspoon fresh thyme leaves
dash salt and pepper
Instructions
In a bowl, combine flour, baking powder and salt. Cut in butter with a pastry cutter or use your fingers until course crumbs form. Add egg. Stir to combine. Mix quickly to form a dough. Wrap in plastic wrap and refrigerate for about 1 hour.
Press dough on bottom and up sides of a lightly greased 8-inch pie plate. Pre-bake at 400°F for about 10 minutes.
For filling, cut bacon into thin strips. Rinse and slice tomatoes. In a skillet, sauté bacon until crisp. Layer bacon strips, sliced tomatoes, cheese and chives in pre-baked pie shell.
Beat eggs and milk. Season with salt, pepper and thyme. Pour egg mixture over tomato mixture.
Bake pie at 375° for about 25 minutes or until filling is set and lightly browned on top.
