Iced Baily's over Java Rocks
An especially delicious twist on a well-loved classic.

- 5 ounces Bailey's Irish Cream
- 1 ½ cups coffee or espresso cold
- ½ tsp vanilla extract
- Homemade Whipped cream optional, recipe link in notes below
Make ice cubes by pouring coffee or espresso into ice cube molds (I use two-inch square silicone molds). Freeze for at least 6 hours or until solid.
Chill small cocktail glasses in the refrigerator for at least 10 minutes.
Add regular ice to a cocktail shaker, pour in Bailey's and vanilla extract. Cover and shake for 10 seconds, to chill.
Place coffee ice cubes into your chilled glasses (three to four regular-size cubes or one two-inch cube). Using the shaker's strainer, pour Bailey's mixture over coffee ice cubes, dividing evenly amongst the glasses. Top with whipped cream if desired.
A 2-inch ice cube tray holds 100ml in each square, or 1/3 cup + 2 Tbsp.
