Iced Bailey’s over Java Rocks

There’s no better way to end the day (or begin the night!) than with this special twist on a well-loved classic. Bailey’s Irish Cream, coffee ice cubes, definitely some whipped cream. . . absolute yum!

Ingredients

  • 5 ounces Bailey's Irish Cream
  • 1 ½ cups coffee or espresso cold
  • ½ tsp vanilla extract
  • Homemade Whipped cream optional, recipe link in notes below

Instructions

  • Make ice cubes by pouring coffee or espresso into ice cube molds (I use two-inch square silicone molds). Freeze for at least 6 hours or until solid.
  • Chill small cocktail glasses in the refrigerator for at least 10 minutes.
  • Add regular ice to a cocktail shaker, pour in Bailey's and vanilla extract. Cover and shake for 10 seconds, to chill.
  • Place coffee ice cubes into your chilled glasses (three to four regular-size cubes or one two-inch cube). Using the shaker's strainer, pour Bailey's mixture over coffee ice cubes, dividing evenly amongst the glasses. Top with whipped cream if desired.

Notes

A 2-inch ice cube tray holds 100ml in each square, or 1/3 cup + 2 Tbsp.
