This gorgeous pie is impressive for breakfast, brunch, lunch or a light dinner. It looks as good as it tastes and makes a beautiful addition to a potluck. This is one of my favorite recipes; I’ve been making it for over 20 years!
Tomato and Cheese Pie
A gorgeous pie that looks as good as it tastes. Impressive for breakfast, brunch, lunch or a light dinner.
Ingredients
Pie Crust
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- dash salt
- ½ cup butter
- 1 egg
Filling
- 4 slices bacon
- 4 fresh tomatoes
- 1 cup shredded cheddar cheese
- 2 Tbsp chopped chives
- 2 eggs
- ½ cup milk
- ½ teaspoon dried thyme or 1 teaspoon fresh thyme leaves
- dash salt and pepper
Instructions
- In a bowl, combine flour, baking powder and salt. Cut in butter with a pastry cutter or use your fingers until course crumbs form. Add egg. Stir to combine. Mix quickly to form a dough. Wrap in plastic wrap and refrigerate for about 1 hour.
- Press dough on bottom and up sides of a lightly greased 8-inch pie plate. Pre-bake at 400°F for about 10 minutes.
- For filling, cut bacon into thin strips. Rinse and slice tomatoes. In a skillet, sauté bacon until crisp. Layer bacon strips, sliced tomatoes, cheese and chives in pre-baked pie shell.
- Beat eggs and milk. Season with salt, pepper and thyme. Pour egg mixture over tomato mixture.
- Bake pie at 375° for about 25 minutes or until filling is set and lightly browned on top.
