Tomato and Cheese Pie

This gorgeous pie is impressive for breakfast, brunch, lunch or a light dinner. It looks as good as it tastes and makes a beautiful addition to a potluck. This is one of my favorite recipes; I’ve been making it for over 20 years!

Tomato and Cheese Pie

Ingredients

Pie Crust

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • dash salt
  • ½ cup butter
  • 1 egg

Filling

  • 4 slices bacon
  • 4 fresh tomatoes
  • 1 cup shredded cheddar cheese
  • 2 Tbsp chopped chives
  • 2 eggs
  • ½ cup milk
  • ½ teaspoon dried thyme or 1 teaspoon fresh thyme leaves
  • dash salt and pepper

Instructions

  • In a bowl, combine flour, baking powder and salt. Cut in butter with a pastry cutter or use your fingers until course crumbs form. Add egg. Stir to combine. Mix quickly to form a dough. Wrap in plastic wrap and refrigerate for about 1 hour.
  • Press dough on bottom and up sides of a lightly greased 8-inch pie plate. Pre-bake at 400°F for about 10 minutes.
  • For filling, cut bacon into thin strips. Rinse and slice tomatoes. In a skillet, sauté bacon until crisp. Layer bacon strips, sliced tomatoes, cheese and chives in pre-baked pie shell.
  • Beat eggs and milk. Season with salt, pepper and thyme. Pour egg mixture over tomato mixture.
  • Bake pie at 375° for about 25 minutes or until filling is set and lightly browned on top.
