Ingredients

  • 2 packages frozen cavatelli; cooked, drained and chilled
  • 3 cups about 1 1/2 pints sliced grape tomatoes, halved
  • 2 ½ cups frozen super sweet corn kernels I love Trader Joe's
  • cup fresh basil leaves, sliced in a chiffonade
  • ¼ cup freshly grated Parmesan cheese
  • Freshly ground black pepper to taste

Vinaigrette

  • ½ cup olive oil
  • 2 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 2 teaspoons Dijon mustard
  • 2 Tbsp freshly grated Parmesan cheese
  • 1 Tbsp minced fresh basil
  • ½ teaspoon minced fresh garlic
  • 1 teaspoon salt
  • Freshly ground black pepper to taste

Instructions

  • Boil cavatelli according to package directions. Drain, rinse under cold water, place in a bowl to chill in the refrigerator while you prepare the rest of the ingredients.
  • In a large bowl, combine the tomatoes, corn, basil, parmesan, black pepper and chilled cavatelli.
  • In a small bowl, whisk vinaigrette ingredients until blended. Pour over salad and toss gently to coat. Cover and chill until ready to serve.
