Cavatelli Summer Salad
Summer in a bowl! Tomatoes, corn, basil, and a tasty vinaigrette all come together to make this salad a colorful and delicious addition to your table.
Ingredients
- 2 packages frozen cavatelli; cooked, drained and chilled
- 3 cups about 1 1/2 pints sliced grape tomatoes, halved
- 2 ½ cups frozen super sweet corn kernels I love Trader Joe's
- ⅓ cup fresh basil leaves, sliced in a chiffonade
- ¼ cup freshly grated Parmesan cheese
- Freshly ground black pepper to taste
Vinaigrette
- ½ cup olive oil
- 2 Tbsp red wine vinegar
- 2 Tbsp lemon juice
- 2 teaspoons Dijon mustard
- 2 Tbsp freshly grated Parmesan cheese
- 1 Tbsp minced fresh basil
- ½ teaspoon minced fresh garlic
- 1 teaspoon salt
- Freshly ground black pepper to taste
Instructions
- Boil cavatelli according to package directions. Drain, rinse under cold water, place in a bowl to chill in the refrigerator while you prepare the rest of the ingredients.
- In a large bowl, combine the tomatoes, corn, basil, parmesan, black pepper and chilled cavatelli.
- In a small bowl, whisk vinaigrette ingredients until blended. Pour over salad and toss gently to coat. Cover and chill until ready to serve.
