This was the first meal my daughter Corinne made all by herself! She learned this recipe in home economics class when she was in middle school (without vodka, of course!). We’ve been loving it ever since.
Penne alla Vodka
A simple and delicious classic, sure to please everyone.
Ingredients
- ¾ box penne rigate mezze penne or other smaller-sized penne
- 1 Tbsp salt for the water
- 6 Tbsp butter
- 3 scallions, finely sliced
- 1 Tbsp minced or pressed garlic
- ½ teaspoon salt
- ½ teaspoon crushed red pepper flakes
- 28 oz can of crushed tomatoes you can substitute tomato sauce
- ½ to ¾ cup light cream depending on how you like it
- 12 fresh basil leaves, chopped
- ¾ cup freshly grated parmesan cheese
Instructions
- Bring a pot of water to boil for the pasta, add salt to the water and cook pasta according to the directions.
- Meanwhile, in a pot large enough to fit the pasta and sauce together later on, melt the butter over medium-low heat. Add scallions, garlic, salt, and red pepper flakes. Sautee for two to three minutes. Add tomatoes and stir to combine. Bring to a simmer and simmer for about five minutes. Keep at a low simmer until the pasta is ready.
- Over low heat, add the cream to the sauce, stirring well to combine. Don’t boil the sauce after the cream is added. Drain the pasta and add it to the sauce. Toss 1/2 cup of the parmesan and 3/4 of the basil with the pasta and sauce, using the rest for garnish.
Notes
You can add 1/4c of vodka at the same time as the tomatoes, simmering for a few minutes until the alcohol cooks off.
